Method
- Place the oil in your 3at pot and on a med-high stove.
- When the oil shimmers, add onions and cook 1-2 minutes
- Add your rice and stir into the rice, keep stiring slowly looking for the "puffing"
- Add remaining ingredients, stir, cover, and bring to a boil
- Reduce heat to low and let sit for 15 minutes
- Remove lid and fluff rice, salt and pepper to taste.
Notes
Rough chopping doesn't need to be pretty but you do need to be consistent on your size. Look at your pinky fingernail, that should be about the size of your onions. Fine chopping is simply cutting it as small as you can get it.
