Tomato Rice Pilaf

Part of RO3 starter recipes this warm French classic comes from humble beginings.

Ingredients
  

  • 1.5 cup Rice, long grain [core]
  • 1 can Tomato, diced 12 oz can [1st add]
  • 1 ea Onion Peeled, rough chopped [2nd add]
  • 1 ea Garlic, clove fine chopped. [3rd add]
  • 1.5 can Water Use the tomato can
  • 2 Tbl Vegetable Oil (or Olive Oil)
  • 1 Pinch Salt and Pepper As needed

Equipment

  • 1 3 qt Pot Part of the initial start up set

Method
 

  1. Place the oil in your 3at pot and on a med-high stove.
  2. When the oil shimmers, add onions and cook 1-2 minutes
  3. Add your rice and stir into the rice, keep stiring slowly looking for the "puffing"
  4. Add remaining ingredients, stir, cover, and bring to a boil
  5. Reduce heat to low and let sit for 15 minutes
  6. Remove lid and fluff rice, salt and pepper to taste.

Notes

Rough chopping doesn't need to be pretty but you do need to be consistent on your size. Look at your pinky fingernail, that should be about the size of your onions. Fine chopping is simply cutting it as small as you can get it.
