Method
- Place flour on a clean counter surface and make a volcano well in the center.
- Around the edges, sprinkle the baking powder, salt, and sugar. (and cheese if using)
- in the center pour the water and oil.
- using the fork stir in the flour a litttle at a time until the dough is shaggy.
- Scrap everything into a ball and press down to about 1" thick.
- Cut into 8 equal pieces.
- Lightly oil your pot and your hands. Place the bicuits into the pot in a single layer. Place the lid on the pot.
- Let rest for 10 minutes.
- Place the pot on a med-low heat and cook for about 12-14 minutes. Flip biscuits (see notes) and bake for 6-8 min more.
Notes
This is a quick breakfast meal or an afternoon snack in just minutes. Flipping the biscuits can seem a little challenging. Remove the lid. Grab a plate large enough to cover the pot. Flour the plate or dust the top of the biscuits, place the plate on the pot and in one quick motion flip the pot over your biscuits should just fall right out. Now slide the biscuits back into the pot, cooked side up, and finish cooking.
Alternatively, you can preheat your oven to 375°-400° F and place your ovenproof pot into the oven and bake the buscuits for 12-14 minutes.
