Method
- Add salted water to the pot and bring to boil.
- Add pasta to the water, stir to separate, return to boil then reduce heat to med-low.
- When almost done (about 6-8 minutes) reserve a cup of pasta water and drain the pasta. Set aside.
- Return pot to stove and raise temp to med and add oil.
- When the oil is just starting to shimmer add the garlic and stir constantly.
- When the garlic is golden and the smell blooms add the pasta and toss with the oil/garlic.
- Use the pasta water, about ½, to develop a creamy sauce by adding and continue to stir. Add more slowly for more sauce as the water, starches, and oil emulsify (come together)
- Salt and Pepper to taste.
- Optionally, stir in parmasan cheese to the sauce for an alfredo-like sauce.

This is a super fast meal with minimal ingredients. It serves to show how simple dishes can be made with huge impact.
