Ingredients
- 2 ea Tomatoes, canned 12 oz [core]
- 6 ea Tomatoes, fresh about 24 oz, chopped fine (optional)
- 1 ea Onion, small peeled, chopped fine [1st add]
- 2 tbl fresh herb (basil, thyme, parsley, or similar) chopped fine, [2nd add]
- 1 ea garlic, clove chopped fine [3rd add]
- 1/2 can water use the tomato can or a coffee cup
- 2 Tbl oil (vegetable, olive)
Method
- Heat the oil in the pot over a med-high heat until shimmering.
- Add the onions and cook until translucent and softened a bit
- add the garlic and stir until aromic (starts to smell nice, about 1-2 min)
- Add the tomatoes and water then bring to a boil then reduce heat to simmer
- cook for about 15 minutes
- Add the herbs in the last few minutes, salt and pepper to taste.
