Oatmeal Porridge with Fruit

Ingredients
  

  • 1 cp Oats, Rolled or cut [core]
  • 1 cp water
  • 2 cp Milk reserve 1/2 cp [1st add]
  • 1 Tbl Cinnimon, ground [2nd add]
  • 12 oz Fruit of choice, chopped or whole rough chop [3rd add]
  • 2 Tbl Fat (vegetableoil , lard, butter) Optional
  • 1 pinch Salt and Pepper Yes, pepper, a light touch but adds a depth.

Equipment

  • 1 3 qt Pot Part of the intitial starter set.

Method
 

  1. Add water and most of the milk, cinnimon (and the fat if using) to the pot and bring up to a simmer
  2. Once simmering, add oats and keep stirring until they start to thicken let simmer about 10 min.
  3. Salt and pepper to taste.
  4. Serve and finish (add on top) with the rest of the milk and the fruit.

Notes

Most grains cook to easy ratios you can remember. Rice (just hydrated) is about 2:1 water to grain. Porridge-style grains like oats or grits run 3:1 to 5:1, depending on how loose you like it.
Here we use 1 cup oats to 3 cups liquid—yielding about 1 cup per serving once fruit is added.
You'll notice little added sugar. The fruit provides natural sweetness. If you're new to this, it may taste less sweet than you're used to—but over time your taste buds recalibrate and crave the real thing.
